Fes has historically been the spiritual, intellectual and cultural of Morocco and in 1981 was named aUNESCO World Heritage Site. Located in between the Rif and Atlas Mountains, Fes has a medina filled with 150 mosques, hammams, communal bread ovens, and fountains – all characteristic of Moroccan daily life. The 9th century medina of Fes is home to the oldest university in the world, was named Morocco’s capital until the end of the 13th century, and still retains its ancient buildings, madrasas, foundouks, palaces and residences dating back to its origin. Even the Chourara leather tannery still feeds pigeon poop and pomegranates to cows, sheeps, goats, and camels – the way it did 800 years ago – so the animal’s skin will be soft.
